Private Stock New York State Rare Aged Cheddar Cheese
Tome de Savoie, a cow's milk cheese from lower Savoie in the French Alps
Beaumont, a cheese made high in the mountains of Savoie, different in flavor from the Tome.
Pont L'Eveque, is one of the best of the many cheeses of Normandy.
Pipo-Cheese Grieges, this cheese is made in the Department of Ain just east of Burgundy.
Gourmandise, a cow's milk cheese from Quincy in Berry, the heart of France, and a well known wine country.
Provolone, an uncooked, whole cow's milk, drawn-curd cheese. It is the pear-shaped cheese that hangs in festoons in cheese shops.
Tallegio, made in Lombardy, also a whole cow's milk uncooked cheese; very pale straw color, smooth in flavor and slightly aromatic.
Bel Paese, which means "beautiful country." A soft, sweet mild cheese. Made in Lombardy
Crema Danica, a creme cheese from Denmark which is excellent with Rose Wines.
Melba rounds served exclusively with these cheeses.
