| Fish- Chablis Grand Cru Moutonne, 1964 - Estate Bottled - Long Depaqui (Sha-BLEE Grahn Kroo Moo-TOHN)- Pale gold in colour, clean on the palate and free from sweetness or acidity. This six acre vineyard is located at the center point of the hillside north of the village containing all eight of the vineyards designated as Chablis Grand Cru. |

| Entree- Chateau Rauzan-Segla, Bottled at the Chateau (SHA-toe Roe-zahn-Say-glah)- A distinguished balanced red bordeaux with a lovely ruby colour, velvety body and a faint overtone of wild violets in its bouquet. This carefully tended vineyard is located in the commune of Margaux, and is generally second only to Chateau Margaux itself. | |
| Beef and Cheese- Bonnes-Mares - 1959 - En Magnums, Estate Bottled - Comte Georges de Vogue (Bon-MAHR)- This great red burgundy is a Tete de Cuvee lying partly in Morey St. Denis and partly in Chambolle-Musigny and shares with Musigny the top ranking in this area of great vineyards. The 1959 vintage has matured into expected greatness and you will find further devlopment of aroma and palate as it rests for ten or fifteen minutes in your glass. | |
| Dessert- Gewurztraminer Hugel 1961, Reserve Exceptionnelle Beerenauslese (Geh-VURTZ-trah-mee-ner Hyou-gel) - This rare and highly prized dessert wine is only available once or twice in a decade. When favoured by a long, sunny autumn, the spicy grapes are left on the vines and are picked one by one as they become overripe. The supply is very limited and its production is obviously for prestige, -not profit. For this special experience, we are indebted to the generousity of our Echanson, Kenneth Granger, who presented a case from his cellar. |
